Rhubarb Shortbread Bars

I question the ingredients.  I don't think that is enough crust for a 9x13.  I think the crust might need to be doubled.  Or the topping halved to go into a 9x9.

Yield: 12 bars (9x13pan)

Crust:
1c flour
1/2c butter
5T sugar (1/3c)
pinch of salt

Topping:
3 eggs, beaten
1.5c sugar
1/2t salt
1c flour
3/4t baking powder
1t vanilla
4c raw rhubarb

- Preheat oven to 350F
- Mix crust ingredients in bowl until well combined
- Gently press crust mixture into a 9x13 pan
- Bake crust for 15 min
- Combine ingredients in bowl in the given order. Mix well.
- Pour topping over crust and back for another 35-40 min until set and top begins to lightly brown.

Caramel Cream Cheese Custard (Flan de Queso)

My version to try.
6c milk (evaporated down to 3c) + sweetener to taste
1/2c sugar + 2T sugar
8oz cream cheese
2t vanilla

Start with 6c milk. Pour into 9x13. Evaporate milk down to ~3c in a 180-200F oven for ?? Or large bottom pan on the stovetop for ~30min (30min doesn't seem long enough to simmer off 50% of the liquid).  Don't allow it to boil.  Allow to cool.  Sweeten to taste.

Then follow as below.

1/2c sugar
2T water
8oz cream cheese
8 eggs
14oz sweetened condensed milk
12oz evaporated milk
2t vanilla

-Preheat oven 350F

-Cook sugar and water in a small saucepan over medium-high heat, gently swirling the pan (do not stir), until the mixture turns golden brown, 5 to 7 minutes. Immediately, pour the caramel carefully into a 9-inch round metal cake pan. If it stiffens before it completely covers the bottom of the pan, warm the pan in the oven, then swirl to cover the bottom.

-Beat cream cheese in a large bowl with a mixer at medium-high speed until soft. Beat in eggs, one at a time, until thoroughly combined, scraping down the sides. Add condensed milk, evaporated milk and vanilla; mix until combined. Carefully pour into the prepared pan. (You may hear some cracking; the pan will be very full.)

-Place the cake pan in a larger pan and pour enough hot water around it to come 1 inch up the sides. Bake until golden and set at the edges but still wobbly at the center, about 1 hour. A knife inserted in the center should come out clean.

-Transfer the cake pan to a wire rack and let cool to room temperature, about 1 hour. Then cover and refrigerate for at least 4 hours or overnight. To serve, run a knife around the edge of the pan and invert the flan onto a plate.

Sausage Balls-Low Carb

 I looked through a lot of recipes and decided to wing it.  I liked how it turned out so wrote it down.

1lb sausage
1.5c shredded cheddar cheese (8oz=2c shredded cheese)
1.5c almond meal or flour
1/2c coconut flour
3 eggs
4oz (1/2 block) softened cream cheese
1T baking powder
~1T flax seed (I just dumped it in)
sprinkle of cayenne
sprinkle of everything beagle seasoning
sprinkle of Monterey steak seasoning

-Mix everything together by hand.
-Use a spoon and put on silicone mats on cookie sheets
-Bake at 400F for 10min, flip them over and bake for another 10min.

Fajita Seasoning

This is the amount of seasoning I use to season a flat (4-5lb??) of chicken that has been cubed.

1/4-1/2c oil
1/4-1/2c lemon juice
1T Chili powder
1T cumin
2t garlic powder
2t onion powder
2t smoked paprika
1t oregano
1t salt
1/2t pepper
2-3t liquid smoke.

Stir.
Throw in cubed chicken and stir to distribute seasoning.
Let marinate 30min+

Montreal Steak Seasoning

 This is a combination of many recipes and reviews.  I don't really have one website that I took it from.

2T black pepper (prefer coarse)
2T paprika (I use smoked)
2T salt (combination of smoked, coarse, or garlic)
1T garlic (combination of minced or granule)
1T onion (combination of minced or granule)
1T coriander (ground and/or crushed seeds)
1T mustard seed crushed
1T dill seed crushed

Crush coriander, mustard, and dill seeds with a mortar and pestle.

Dump all ingredients into a jar and shake to stir.

Sausage Seasoning

1lb ground meat
3/4t salt
1/2t pepper
1/2t sage
1/4t thyme
1/4t rosemary
1/8t marjoram
1/8t nutmeg
pinch cayenne

Mix together

3T melted butter (fat)
1lb grated cheese
1lb sausage (see below)

1lb ground meat
3/4t salt
1/2t black pepper
1/2t sage
1/4t thyme
1/4t rosemary
1/8t marjoram
1/8t nutmeg

-Preheat oven to 400F
-Combine all ingredients
-Roll into 1.5" balls and place on cookie sheets
-Bake for 15min at 400F


Everything Bagel Seasoning

 documenting this so I don't have to search for it.  Found at https://www.sustainablecooks.com/sheet-pan-dinner/  I like this version better.

1 part poppy seeds
1 part minced dried onion
1 part minced dried garlic
1 part wht sesame seeds
1/2 part blk sesame seeds
1/2 part flaky salt or coarse salt
*1/2 part black mustard seeds (optional because I have it and like it)

Use a 1/2T to measure into the everything bagel seasoning jar.  Jar hold ~5T so this leaves a little room to spare.

2t dried minced onion
1t flaky sea salt or garlic salt

Fish, baked with Lemon Cream Sauce

 Found this on Yummly https://www.recipetineats.com/baked-fish-with-lemon-cream-sauce/ and it sounded good.

Ingredients
4 white fish fillets (5-6oz)
salt & pepper
4T butter
1/4c cream
1-2 minced garlic cloves
1T Dijon or spicy brown mustard
1-2T lemon juice
1-2T finely chopped onions or chives

-Preheat oven 400F
-Place fish in baking dish. Salt & pepper on both sides.  Make sure fish is thawed and patted dry.
-Melt butter and combine with cream, mustard, and lemon juice.
-Sprinkle fish with onions or chives, then pour the sauce over it all.
-Bake for 10-12min, or until fish is cooked.
