All About the Messy Bun

Materials: <100g of worsted weight yarn. Red Heart Boutique Unforgettable-Parrot.

Size H Hook & tapestry needle to sew in ends.

Note: The ch2 at the beginning of each round does not count as a stitch. The ch2 is to help hide your join line. When you slip stitch into the top of the chain at the end of each round to join, pull snugly before crocheting into the first stitch. This helps to close up the gap a bit. Notice the join line is hardly noticeable: my color changes happen to occur at the exact point of the join for this hat, creating a very noticeable jog line. More than likely, yours won’t be as noticeable.




Chain 36 and join in the round to the first chain, being careful not to twist. This will give you an
opening that is approximately 2 ½” in diameter.
Row 1: Ch2, DC in first chain stitch and in each stitch around. Join with slip stitch to ch2. 36
stitches.
Row 2: Ch2,* 2 DC in the first stitch, DC in next 2 stitches. Repeat from * around. Join with slip
stitch to the ch2. 48 Stitches
Row 3: Ch2, * 2 DC in the first stitch, DC in next 3 stitches. Repeat from * around. Join with slip
stitch to the ch2. 60 Stitches.
Row 4: Ch2, * 2 DC in the first stitch, DC in next 4 stitches. Repeat from * around. Join with a
slip stitch to the ch2. 72 Stitches.
Row 5- 11**: Ch2, DC in each stitch around. Join with a slip stitch to the ch2.
Should measure 5-5.5".  Total lenght with ribbing should be 7-7.5"

** You can make it longer or shorter by adding or decreasing these DC rows. Take in to account
that the ribbed brim will add approx. 2 more inches to the hat.

RIBBED BRIM:
When you have completed your last DC row and joined to the ch2, ch11 stitches. SC into the
2nd chain from the hook and in each chain to the hat. 10 Stitches.

Slip stitch into the next 2 stitches on the hat (the dc stitches of the last dc row worked in the
round). Ch1 and turn.

(Now begin to crochet into the back loops only)
** Single crochet into the BLO of the next 10 stitches. On the final stitch (10th stitch) on the
edge, crochet into both loops for this row and throughout for a nicer finished edge. Ch1 and
turn.

Single crochet into the BLO of each of the 10 single crochet stitches, then slip stitch into the
next 2 stitches of the last DC round. Ch1 and turn.

Repeat from ** around the entire hat, until you have only 1 stitch left on the hat to slip stitch into
(if you have 2, that’s ok).

Hold the 2 edges of the brim together and slip stitch up the edge to join. Fasten off and weave in
your ends.

ALTERNATE ENDING: (Because sometimes we just need alternatives!)
After making quite a few of these, I decided I wanted a quicker brim. I love love the look of the
single crochet brim, but that is a lot of single crochets! ;) So I’ve been playing around with some
different finishes, and really like this one, so here it is.

Follow pattern through Row 10.
Row 11: Ch2. *DC in first stitch, SC in next. Repeat from * around. Join to beginning ch2.
Row 12: Ch1. *SC in the first stitch, DC in the next. Repeat from * around. Join to beginning
ch1. (On this round you are doing a sc in the dc of the previous round, and a dc in the previous
sc).
Row 13: Ch2. HDC in each stitch around. Join to beginning ch2.
Row 14-19: Ch2. *FPDC around the first HDC of the previous round. BPDC around the next
HDC of the previous round. Repeat from * around. You should end with a BPDC. Join to
beginning ch2.
You can add or subtract as many of these brim rows as you like. As long as the hat, when
finished, is 7 - 7 ½” long, you will have a hat that is sized to fit most average adult heads.

ALTERNATE HAT ROWS: (Because DC’s all around can get boring!)
Work pattern through row 4:
Row 5: Ch2. *DC in first stitch, sc in next stitch. Repeat from * around. Join to beginning ch2.
Row 6: Ch2. *SC in first stitch, dc in next stitch. Repeat from * around. Join to beginning ch2.
Row 7: Ch2. DC in each stitch around. Join to beginning ch2.
Row 8: Ch2. DC in each stitch around. Join to beginning ch2.
Rows 9-12: Repeat Rows 5-8 one more time.
Row 13: Repeat row 5.
Row 14: Repeat row 6.
Row 15: Repeat row 7.
Now you are at the brim. You have a choice to either do the original brim (sc in the blo), or
follow Rows 14-19 of the ALTERNATE ENDING instructions above, adding a nice F&BPDC
ribbing. Note that you will be doing your F&BPDC’s around the double crochet round of row 15
(rather than the HDC rows as indicated in the alternate brim instructions above).

Brussels Sprouts

When I was in Nashville we went to a restaurant called Adele's and I had the Brussels Sprouts that was really good.

Ingredients

  • 1 pt. Brussels sprouts – washed, stemmed, cut in half
  • 1/2 c. bacon, diced
  • 3 cloves garlic, peeled, stemmed and smashed
  • 2 tbsp. butter
  • 2 tbsp. cream

Directions

  1. In a heavy saute pan cook the bacon with 1 tbsp. olive oil, add the sprouts and cook until golden.
  2. Add the butter, garlic and the cream then season. Bake in 350 degree oven for 10 minutes. Serve warm.

Cauliflower Salad

When I was in Nashville we went to a restaurant called Adele's and I had a cauliflower salad that was really good.  I think it would be a great non-starchy potluck side.

Although I must admit I won't be using champagne vinegar and will be using rice wine vinegar instead.


Ingredients

  • 8 oz. of raw cauliflower [average head size 20oz (2.5times)]
  • 1/4 c. minced scallions [2/3c]
  • 1 tbsp. golden raisins [2.5T] or cranraisins
  • 1 tbsp. toasted pistachios [2.5T]
  • 1.5 tbsp. champagne vinegar [3.75T or short 1/4c]
  • 2.5 tbsp. olive oil [0.39c or a long 1/3c]
  • 1 tsp. sea salt [2.5t]
  • 1/2 tsp. cracked black pepper [1.25t]

Directions

  1. Slice cauliflower on a Japanese mandolin.
  2. Mix in a large bowl with remaining ingredients.
  3. Season with salt and pepper.

Cinnamon Apple Jello Shots

Fireball And Apple Cider Fireball Jello Shots For Halloween

Ingredients

  • 1 cup of water
  • 2 cups of Apple Cider (non-alcoholic is our preferred option)
  • 1/2 to 1 cup of Fireball Cinnamon Whiskey
  • 1/2 cup of Sour Apple Schnapps
  • 2 envelopes, or .5oz, of Knox Gelatin (each envelope is about .25oz)

Directions

  1. Pour the water and apple cider into a saucepan and heat over medium heat.
  2. Pour in the Knox Gelatin and dissolve.
  3. Remove the saucepan from the heat after the gelatin is completely dissolved, and let cool to room temperature.
  4. Pour in the Fireball and Apple Schnapps
  5. Let the mixture cool a little before pouring into plastic jello shot cups.
  6. Put in the fridge until the jello is firm enough (2+ hours)

Makes around 16-32 jello shots depending on how generous you are with each shot. Be careful not to mess with the amount of liquid or the jello could be too runny or too firm.

STEP-BY-STEP INSTRUCTIONS
With Gray, ch 40, 3 s c in 2nd st from hook, 1 s c in each of the next 37 sts of ch, 3 s c in last st, working on other side of ch, 1 s c in each of the next 37 sts, do not join this or the following rounds, place a marker at beginning of each round.
2nd Round. Work 1 s c in each s c on sides and 2 s c in each of the 3 center s c at each end.

Cheesy Meatball Cups

Cheesy Meatball Cups

Makes 16
Estimated prep time: 10 minutes
Start to Finish: 30 minutes

Ingredients

  • 2 (8 ounce) cans crescent dough
  • flour for dusting
  • 5 ounces Cacique Queso Quesadilla Jalapeño, shredded
  • 16 frozen meatballs
  • 1/2 cup garlic spaghetti sauce
  • 1 tablespoon fresh parsley, finely chopped

Directions

  1. Preheat oven to 350° F.
  2. Prepare two muffin tins with (16 molds total) with non-stick cooking spray. Full size tins.
  3. Extend dough on a lightly floured surface. Pull apart dough triangles and press each inside a muffin mold. Covering the bottom of mold and pressing up the sides.
  4. Sprinkle each dough cup with 1 teaspoon shredded cheese. Place a meatball on top of cheese, lightly pressing into the dough.
  5. Bake for 10 minutes. Remove from oven and top with 1 teaspoon of sauce and 1 teaspoon shredded cheese. Place back in the oven and bake for 10 minutes more or until dough is golden brown and the cheese bubbles.
  6. Serve with a sprinkle of fresh parsley.

Salsa Chicken Casserole

Salsa Chicken Casserole
Serves 6
Prep Time: 5 minutes
Cook Time: 1 Hour
Total Time: 1 hour 5 minutes
Ingredients
1 cup uncooked basmati rice, rinsed
1 cup frozen corn kernels, thawed
1-15-ounce can black beans, drained and rinsed
1-16-ounce jar salsa
1 cup chicken broth
1-½ teaspoons ground cayenne pepper
1 teaspoon oregano
½ teaspoon salt
¼ teaspoon black pepper
2 large chicken breasts (about 1-1/2 pounds), thawed
1 cup shredded cheese blend
2 green onions, sliced
Directions
Preheat the oven to 375 degrees Fahrenheit.
In an 8-inch-by-8-inch baking dish, add the rice, black beans, corn, salsa, chicken broth, chili powder and oregano. Stir to combine.
Cut the chicken breasts into 3 pieces and submerge into the liquid in the baking dish as far as possible.
Cover the casserole dish tightly with foil and bake for 1 hour, until the rice is tender and the liquid has been absorbed.
Remove from the oven and sprinkle with cheese. Return to the oven and bake just until the cheese has melted.
Top with green onions and serve.

Paper Flower

Fun, huh?! I'm seriously in love!

Ready for the tutorial? All you need to make your very own flower is scrapbook paper, scissors and a hot glue gun.

Step 1. Start by cutting out petals. You will want six each of three varying sizes. You can experiment with petal shapes and sizes to make all different variations of flowers.  And just to give you an idea of size, my petals were about 3", 4" and 5" and the finished flower turned out to be about 11" across. 
Two sizes of petals. (I had already used one stack when I remembered to take the picture.)

Step 2. Place a small dot of hot glue at the bottom center of a petal.

Step 3. Press the petal together and pinch until the glue cools. Gently curl the outside edges so they are slightly rounded. Repeat with all six same-sized petals.

Step 4. Place a small dot of glue on the bottom right corner of the petal.

Step 5. Press the glue onto the left corner of another petal, lining up the corners with right sides together. Repeat until all six petals are glued together into a circle. Then do the exact same thing with the other sizes of petals. Each size will make it's own ring.

Step 6. Put hot glue on the back of the smallest petals and glue them to the medium layer. Glue the medium layer to the largest layer.

See how I spaced the petals so they overlap and aren't lined up perfectly? Remember that when you are gluing the layers together. You don't want the tips of the petals all lined up or it won't look right.

Step 7. Make something decorative to cover the center hole. I layered paper circles and added a stamped butterfly on this one, but the possibilities are endless....buttons, rhinestones, words, photos...there are tons of cute possibilities.

The last thing I did was to add a paper loop on the back to make them easy to hang up.

Just to show you how versatile this method is, here is another flower I made using the same technique: 
It has a completely different feel to it! All I did differently was cut out rounded petals that were a little longer and skinnier. I also added pointed leaves in another color around the outside and a big yellow button in the center.

Some other ideas to get your creative juices flowing:

- Use glitter paper. Because everything is better with glitter!
- Try crinkling the paper before assembling everything. It will give it a softer, antique look.
- Ink/distress around the edges of each petal before assembling.
- Make two identical flowers and glue them back-to-back to make a flower that looks good from both sides.
- Try using vellum or embossed paper.
- Sew around the edges of each petal before assembling. The stitching would be such a cute detail!
- Make a jumbo flower with layer after layer of petals.

I think I need to make a hundred of these. They are so fun and the possibilities are endless!

Lemon Drop Shots

Makes 36 lemon drop wedges

INGREDIENTS

– 6 lemons, cut in half lengthwise
– ½ cup lemon juice (from the 6 lemons)
– ½ cup water
– 3 tablespoons orange juice
– ⅓ cup granulated sugar
– 5 ½ teaspoons (2 envelopes) unflavored gelatin
– ½ cup citrus vodka

DIRECTIONS

  1. Cut around the edges of the lemon flesh to separate it from the peel. Scoop it out into a bowl and scrape the peel clean.
  2. Place each clean peel into a jumbo muffin tin, or any container that will hold them upright, separate, and prevent spillage.
  3. In a small sauce pan, combine the lemon juice, orange juice, sugar and water.
  4. Sprinkle the gelatin over the mixture and let it sit for 5 minutes, until the gelatin is softened.
  5. Heat the pan over medium heat, and stir until the sugar and gelatin are completely dissolved, about 2 to 3 minutes. Do not let the mixture boil.
  6. Whisk in the vodka and remove from the heat.
  7. To make it easier to fill the lemon halves, transfer the gelatin mixture to a large liquid measuring cup when cool enough to safely do so.
  8. Fill each peel up to the top.
  9. Transfer the tins of filled peels to the refrigerator for 6 hours, or overnight, until the gelatin is set.
  10. Slice each lemon half into thirds and serve.

TIP

  • Squeeze the lemons for their juice before scooping out the fruit to make slicing easier.

Beef and Broccoli Stir-Fry

I clipped this recipe from Taste of Home magazine several years ago and have found it to be the best-tasting easy beef and broccoli stir-fry. It is credited to Ruth Stahl. I often use charcoal chuck steak, which is very tender and lean. I also like that it doesn't call for any unusual ingredients.

3T cornstarch, divided
water
1/2t garlic powder
1lb boneless round steak cut into 3" strips
2T vegetable oil, divided
4c broccoli florets
1 sm oinion cut into wedges
1/3c soy sauce
2T brown sugar
1t ground ginger
hot cooked rice

In a bowl, combine 2T cornstarch, 2T water and 1/2t garlic powder until smooth. (I normally add a little soy sauce also)

Add beef and toss.

In large skillet over medium high heat, stir-fry beef in 1T oil unitl done. Remove and keep warm.

Stir-fy broccoli and oinions in 1T oil for 4-5min.

Return beef to pan.

Combine 1/3c soy sauce, 2T brown sugar, 1t ginger, 1T cornstarch, 1/2c water until smooth. Add to pan.

Cook and sitr for 2min.

Serve with rice

NOTE: I add rice wine vinegar to the sauce and decrease the water.  I have also cooked noodles and added it with the sauce.

  • Crochet Hook: Size 5 mm (U.S. H or 8) crochet hook or size needed to obtain gauge.
Instructions:
Main Piece
Ch 37.
1st row: (RS). 1 sc in 2nd ch from hook. 1 sc in each ch across. Turn. 36 sc.
**2nd row: Ch 1. Working in back loop only of each sc, 1 sc in each sc across. Turn.
Rep last row until work from beg measures 4 ins [10 cm]. Fasten off.**
Sides (make 2).
Ch 12.
1st row: (RS). 1 sc in 2nd ch from hook. 1 sc in each ch across. Turn. 11 sc.
Rep from ** to ** as for Main Piece.
Join Sides to Main Piece: Place 1 Side at each end of Main Piece and pin outer edges tog. With RS facing, join yarn with sl st in any corner. Ch 1. Work 1 row of sc around outer edge (through both thicknesses of Side and Main Piece at each end), working 3 sc in each corner. Join with sl st to first sc. Fasten off.
Note: Slip each end around the dusting tool’s base. When one side is soiled, flip the side pockets inside-out and use the opposite side to keep cleaning! The ridge stitch design helps trap dirt.

Here’s what you need:

Special Stitches:

Puff stitch: Yarn over hook, draw up a loop in designated stitch, repeat twice more, yarn over and pull through all 7 loops on hook.

Long single crochet (Lsc): Draw loop through designated stitch to height of row being worked, complete as single crochet (the Lsc takes the place of the next stitch in the current row).

Granola

3T coconut oil
3T honey
1t cinnamon
1/2t salt
1/4t nutmeg
2c rolled oats
1/2c slivered almonds
1/4c craisins
1/4c golden raisins

1. In large skillet, heat coconut oil, honey, cinnamon, salt, nutmeg over medium-low heat for 1min.
2. Raise heat to medium. Add oats, almonds, craisins, and raisins.  Stir to coat and toast.
3. Remove from heat.  When cool, store in an airtight container.



This skillet granola recipe was present during a 4-H meeting.  It is by KSU and the Extension office.
1T oil
1/2c splenda
1/2c water
1t cinnamon

4c old fashioned rolled oats
1c walnut pieces
1c raisins

In large skillet, stir together first 4 ingredients on medium heat.

When bubbly, add rolled oats and nuts.

Stir mixture and cook until brown stirring occasionally.

Add raisins

Cool and store in an air tight container
