Chili Soup

 omg.. how can I not have the chili recipe out here.

This is a loose description. 

onion & carrots
1lb browned ground meat
3 can chili beans (I normally make from dry in advance)
1 can black beans, rinsed and drained (I normally have made from dry in advance)
1 can of diced tomatoes (or 2, just depends on how it looks and if it needs to stretch)

Then I used the taco season recipe for seasoning.
I loosely measure these ingredients for 1lb of ground meat.
1T chili powder (if you don't have enough then you can make it) 
2t cumin
1t salt
1/2t paprika (I like to use smoked)
1/4t garlic powder
1/4t onion powder
1/4t oregano
1/4t cayenne (I use a dash and not near this amount)

Then let it simmer down.

Serve with fritos, sour cream (plain greek yogurt) and shredded cheese.

White Chili

 I make this by throwing things in a pot.  Here are the loose instructions.

Ingredients
-onion
-carrots
-celery
-deboned chicken
-chicken stock
-beans (navy, northern white, pinto, or cannellini) I often use pinto because that is what I have. But I like navy.
-cumin, garlic powder, onion powder, chili powder, smoked paprika, chicken bullion and pepper.
-sm can of green chiles
-sour cream or greek yogurt and/or cream cheese

Instructions.
-Cook chicken, and debone. Make stock.
-In the soup pot, saute onion, carrots, and celery in a little oil.
-Add deboned chicken, stock or water, beans, seasons, and green chiles. Let simmer for a little while.
-Shut off fire and add sour cream or greek yogurt.

Lentil Soup

 I want to make this..  I found it on https://www.sustainablecooks.com/lentil-soup/

Ingredients
3-4 carrots peeled and chopped
3-4 celery stalks chopped
1 onion diced
1-3 potatoes peeled and chopped
garlic or garlic powder
1-1/3c of dried lentils
6c broth
1t smoked paprika
1t parsley
1t thyme
2T pesto
salt and pepper to taste
spinach 

Instructions
-Throw everything except spinach into instant pot.
-Cook at pressure for 10min for brown and green lentils or 8min for red. (I adjusted times for natural release-slow)
-When pressure releases add spinach.

Wedding Soup

 Ok this recipe is too easy and I am just putting it here for my family to use later.

Ingredients
onion
carrots
celery
garlic (I forget to add or don't have)
store-bought meatballs
Chicken broth or water and chicken bullion
onion powder
garlic powder
oregano
basil
small pasta
spinach or kale

Instructions
- Dice up onion and carrots.  Throw them in the pot with a splash of oil so they can start sauteing up.
- Then add in the celery and garlic.
- Cut meatball in half or quarters and throw those in the pot.  Saute everything around.
- Add chicken broth or (water and bullion) to the pot, along with the rest of the spices.
- Bring to a low boil and throw in 7-8oz of small pasta.  Cook according to pasta instructions.
- Optional you can drop 1-2 beaten eggs in.
- Add spinach or kale.

Posole Soup

I found this recipe in "200 Soups" by Madge Baird.  Changed to my instructions.

Make 6-8 servings

1T oil
1c chopped onion
1 carrot
2-3c sliced cabbage
1lb pork cubed
1 14oz can mild red enchilada sauce (make own sauce, it make 3cups)
1 24oz can white hominy drained
1 14oz can diced tomatoes
1t oregano
1/2t cumin
1/2t chile powder
2t salt

Cook onion, carrots, cabbage till soft in oil.

Start enchilada sauce

Add pork and cook till done.

Add enchilada sauce, hominy, tomatoes, and spices.

Might need to add some chicken stock?

Cream of Crap Soup Mix

Cream of crap is my substitute for a can of  condensed soup (ie cream of mushroom, chicken, celery.... soup)

I have been making this for years after I decide that buying all the cans of cream of soup was getting too expensive.  I don't know where I found the original but here is a link to one that the same/similar to what I do. https://www.tasteofhome.com/recipes/cream-style-soup-mix/

2c dry milk
3/4c cornstarch
1t onion powder
1/2t thyme
1/2t basil
1/4t pepper

Combine in ingredients into an airtight container.  Make equivalent to ~9 cans.

To make an equivalent one 10.75oz can of condensed soup
1/3c of mix
1-1/4c of water

To make soup: whisk 1/3c of mix and 1-1/4c water in a saucepan until smooth.  Bring to a boil over medium heat and cook for 2 minutes or until thickened.

Kapani (Drop Noodle Soup)


My dad always made Kapànì when we were little.  I asked someone who was Czech the spelling on facebook.  The way my dad said it sounds like "kup-on-ey"??

In looking more online Kapànì basically means noodle batter.

Ingredients

Soup
-onions
-carrots
-celery
-cooked chicken or stew meat
-stock

Drop Noodles
2-2.5c flour
1/2t salt
2-3 eggs
1/2c water or milk??
1t oil

Soup
- Saute onions, carrots and celery in a little oil.
- Add cooked chicken or fry chicken or stew meat in same pot
- Add stock and water and/or bullion
- I normally add a little onion powder, garlic powder, Montreal steak seasoning (because I like it), sometimes a little sage or celery salt.  Kind of whatever floats my boat.

-while soup is coming to a boil make the drop noodle.

Drop Noodles.
-Mix together flour, salt, eggs, liquid and oil.  Add liquid or flour until it is kind of like a thick pancake batter.  Thicker will make bigger thicker noodles and thinner will make noodle fragments.  I don't really know the amounts other than I normal start with 2+cups of flour, 2-4 eggs, 1//2t salt and a splash of oil.  Then I add liquid to get to a good consistency to drop the noodles.

-When soup is boiling drop noodle mixture with a fork or dribble in thinly.  Let boil till noodles are done (couple of minutes).

Tom Kha Soup

I have found that I love chicken coconut soup.  So I started searching the internet to see if I could find a recipe.

So here is my attempt.  Small batch for me

Ingredients
coconut oil
onions
diced carrots
1t red thai curry paste or cayenne
garlic
1lb boneless skinless chicken
coconut flour to dust for thickening

2c chicken broth (water and bullion)
ginger
lemongrass (2 drops essential oil when liquid is added?)
1/2t basil
salt and pepper to taste

1 14oz cans of coconut milk or coconut cream
mushrooms
~1T fish sauce
2T lime juice

fresh tomatoes
cilantro
optional brown rice or rice noodles.


In pot heat coconut oil of medium heat and add onions, carrots, curry or cayenne, and chicken.  Cook till onions and carrots are soft and chick is half done.  Dust with coconut flour for a thicker soup

Add chicken broth, ginger, lemongrass basil, salt and pepper, bring to a boil.  Then reduce heat and cover and simmer for 10min.

Add coconut cream or coconut milk,  mushrooms, fish sauce, lime juice and **if using 2 drops of lemongrass essential oil.

Add cut up tomatoes and/or fresh cilantro and serve

Greek Lemon Chicken Soup



I looked at many recipes and this is the combination of versions I like.

  • oil
  • onion/carrots/celery
  • chicken
  • chicken broth
  • lemon juice
  • zested lemon
  • pasta/rice/quinia
  • egg
  • kale/spinach
  • salt/pepper

Saute onion/carrots/celery in oil.  
Add cooked chicken or cook chicken.
Add broth, lemon juice and zested lemon. Large pot 8-12c = 1/2c lemon juice
Bring to boil and add pasta.  Cook till pasta is done.
When pasta is cooked to al denta, temper in a few eggs.
Add kale/spinach
Season to taste with salt and pepper.
